Robbie, the blown out whites that John referred to will be sorted when you master the spot metering that we talked about when we were at the Giraffes. In this case, you’d probably meter off of the beak and then you’d retain all that detail.
As for landscape/portrait … look for the dominant lines in the shot. In this case, it’s the neck so it should be portrait. If an animal is facing me then I go portrait. Same with a side on of the face.
