Dark Room Beginner

I’m planning on entering the dark room in the near future fir the very first time to run off some contact sheets and what I was wondering is, what is the best f stop to start off with on the enlarger, f5.6 or f8.
its not going to matter for a contact print but if your baseboard isnt 100% flat and aligned properly and your paper isnt 100% flat the depth of field on the 5.6 might not make your image sharp all over when doing a print
