I’m no pano expert I’m afraid, but here are some suggestions.
It looks like your tripod base is not properly levelled so during the rotation, the horizon is seriously angled. Does your tripod have a spitit level in the base? I know you can get levelling bases that sit between the tripod and the head which might work well. I can also see an exposure problem in the middle section which stands out. Perhaps you can go back and try and rework that to balance the brightness better across the frame.
Aesthetically, I do like the scene with the nice variety of hill, settlement and sea which is all nicely balanced across the frame. I think this location is one to return to, perhaps in better light with more interesting cloud formations. I think if you get the technical problems ironed out then there is a cracking shot to be had here.
watch the horizon, pregnant or drunk horizons happen quick. Love the view point, maybe some colour and contrast balance adjustment. The sailing ships would make a nice crop when the quality and sharpness allows that.
