I rarely if ever post threads in the so-called “General Chat” section.
However, I am prepared to make an exception for this exclusive nfl-competition that goes something like this:
I’ve been without an avatar for a few days now and have decided to run an nfl-competition to come up with a new avatar.
To enter you need to post an avatar in this thread that you think would sum up the nfl-fan character. You need to think along the lines of:
* A very serious photographer
* A very serious forum member
* Well regarded and well respected by all members
* A Digi-Film hybrid kinda guy
* The closest thing to a dedicated General Chat moderator there is
* A Post Processing Bestist
* A guy that makes every effort to attend all PI Events
* The kinda guy that would rob Donnelly’s last fiver and give it to you if you were stuck for 10 fagsThe winner can choose any one of these lavish prizes (thanks to the sponsors) –

With the choice of prizes on offer I’m surprised there hasn’t been a greater take up… (imagine a one of one workshop with Joseph Burns – this man has 65+ years of experience) but it’s the quality of the entrants that has impressed me so far… this compo ain’t like the Photoshop Challenge, these are all 5 Pie members.

Looks like Gigi will be giving pizza-making lessons.
Why? I like pizzas and the Italians make the best pizzas … also good preparation for the PI trip to Italy.

I’m interested to know two things
(1) a good pizza base recipe
and
(2) the tomatoe sauce recipe.
I think I can figure out (3) the toppings myself :)

Carlo! When’sa your Dolmio day?since nfl requested it, here it goes…. the Recession Pizza.
500gr Odlums Strong white flour
250 mL water
salt (half teaspoon, roughly)
a bag of dried yeast Mc Dougalls
(optional, a pinch of sugar)basically in a large bowl put the ingredients, paying attention not to put in direct contact salt and the yeast, since they don’t like eachother. prepare a soft dough which should not stick to your fingers and it’s soft.
now the first tricky part is letting it raise. ideally you look for a warm environment, that possibly keeps the temperature constant. a 30 C oven will do. not more.
the dough should raise until doubles the size.
if it does not, then try adding the wee bit of sugar close to the yeast. and make sure you find the right spot for the reaction.
now. my advice is spending 50 euro for a bread machine, and let her do this bit. 90 mins and you’ll have everything ready.while that raises, grab a can of Tesco value chopped tomatoes, and with a blender prepare the sauce. a whole can will do for 1 kg pizza.
cheese: my choice is again Tesco branded cheddar (the block that I will grate) or if I am feeling fancy, the grated mozzarella. just use some dry cheese, not be tempted by the real mozzarella.
also switch the oven on. maximum temperature.
prepare also the toppings you’d likenow, time to flat our dough. ideally, by hand is the best way. but also using a rolling pin will do. the dough must be very elastic, and make a base less than 1cm thick.
now place it on a tray with some greaseproof paper and put a _very_ thin layer of tomato sauce. spread it using a spoon, make sure that it’s well spread. and thin.
pour on some olive oil, but again a wee bit.now in the oven. this is the second tricky part. you need to find out which is the best position for the tray in the oven. mine is the bottom one, but you might want to find that out for yourself.
we cook this until the crust becomes golden and you’ll see also that raises and makes bubbles. that’s a very good sign.take the tray out from the oven and place your toppings, starting with the grated cheese and all the rest.
now, can I suggest also some toppings?
