Too tired to cook, then eat it raw

Last nights dinner included flying fish and mackerel sashimi (sashimi = raw fish) with ginger, wasabi (spicy green radish) and spring onion. The fin of the flying fish is part of the presentation, it was hard like plastic.
and raw chicken with chili & a mild tasting root veg called daikon. I don’t know why the chicken is red in colour, or why it doesn’t give food poisoning. its a texture is in between raw beef and raw fish.

MartinirishshaguaParticipantlooks very nice and very well presented. I was eating raw fish over in China when I was there. Everyone at the table spoke Chinese (an awkward situation). This little dish with fish cutlets came around to me and everyone was motioning for me to eat. Not wanting to be a rude guest, I had a couple of pieces. Ended up in the hospital for 6 hours the next day. Only foubnd out after that there was a dish of really strong alcohol on the table that you’re meant t soak the fish in to kill any germs that may be on it. Ah well, a learning experience. :wink:
Nice looking dishes though. The fin in the first one looksvery well in terms of persentation.
Think maybe you could have used slightly more DOF on the dishes so that more of the food was in focus (a bit more apparent on the second dish) as some of the veg is OOF with only parts of the meat IF.
Very appatising look though.
BrianMartinOCParticipantJapan is very different than China for food hygiene, I don’t know how they do it, its about 35 deg these days, yet no problem with raw meat or fish.
Its was a shame about some of the food being out of focus, but I didn’t want to reduce the aperture for more dof, as the shutter speed was very slow already. It wasn’t a bright restaurant. I guess I might have focused a bit further forward, it may have got it all in focus.
I had a some very strong liquor with it called shouchu, made from potato, that might have saved me :wink:

JMcLParticipantNice shots though I can’t say the raw chicken would appeal to me (I’ve no problem with raw/nearly raw food – I love steak tartar and sashimi). The main problem would be salmonella, so I guess if it’s from a properly controlled source, and is prepared properly, it’s probably safe enough, though does it actually taste of anything when the chili’s been removed?

MartinOCParticipantYes its perfectly safe to eat, they care alot about the quality of ingredients. The Japanese are a very food obsessed people, if you flick through the 8 or so main channels on tv chances are 3 or 4 will have programmes about food on.
The chicken doesn’t taste of much by itself, to be honest, doesn’t even taste like chicken. But with the seasonings it great.

DOF here is fine.. I’m not sure I’d eat them though!
