Sigma will give you best results , but before buying any third party lens i suggest to try it on your camera first as third party lenses may have BF/FF issues with canon bodies, nikon as well but not so bad as conon.
BF = back focus
FF – front focus
Canon 70-300 is best choice for your bird-watching needs and for macro i would suggest buy a reverse ring for your 18-55mm it will give you great macro results for only few quids

Once you can trigger you 400rx’s then you need to turn on photo cell on 750PRO’s CELL switch , it will let you trigger them “wirelessly”
Photocell react to flash from another unit it can be any source of flash/strobe light and you can even combine studio lights with speedlights (if they have build in photocell)

If you want to buy 70-300 lens for your camera you have to look for nikon 70-300 AF-S !! it will work with d3100 or from Sigma 70-300 with HSM , also have a look on nikon 18-300
I had once on my sigma lens 10 – 20 Holder for Cokin P type filters for wide angle lenses witch take only one filter , but had vinniet on 10 – 11mm

The modelling light goes off when the flash light fires so no need to turn them off. At least thats how my lights work but maybe others differ.
Some lights allow you to have modeling lamp on all the time even if the flash fired but it wont affect exposures.

I think you are using modeling (continuous) light to read your exposure value witch is wrong and then when you press shutter, flash fire and you pictures are over exposure, is that right ??
